Modelsim printing is a little bit better, but similar to Dave if it is going in a document, I use Modelsim to create the scene and then screenshot and image editing software to finish it off.

For Modelsim images, I typically print to PDF, import them into Inkscape, make them pretty, export them as PDF, and bring them into my Latex (pdflatex) docs.
For SignalTap II, even though you can take the data into Modelsim, or directly into MATLAB, I prefer to have the figures look like the SignalTap II GUI, as generally I'm writing a tutorial style document showing how to use the tool.
It would be nice if Altera added a print option like Modelsim that allowed you to print a sample range, and signals list. Hmm, maybe we should all click on the Quartus Feedback link and suggest it :)
