IP generation should definitely not take that long.  I'd try re-downloading the example design into a new directory and recompiling.  If it happens again (I wouldn't wait 12 hours though), I'd look at the Quartus installation and maybe reinstall.  Which exact example design are you using (link?) and does it say in the Design Store that it is specifically for version 25.3.1?  I've seen version mismatches with example designs have issues.
