If you haven't read it yet, I would recommend starting with some of the Altera documentation for this board, such as:

I scanned this document, and I noticed specific information to help you build a VGA monitor driver and use a mouse input. Off the top of my head, I know there are some cool basic games or graphics for a VGA display. Perhaps you could adapt one of those and make a game as a project.
