Read the user guide for the kit and sample examples for NIOS. They are all available in installation directories and Altera website.

I haven't been able to find any tutorials that show me how to do this, the video on the DVD that come with my DE1 shows you using the SOPC builder but doesn't show me how to set up the Quartus II ready to use what it give you.

First install the Quartus II software and then install NIOS II EDK. You should be then able to launch SOPC builder (after you have opened Quartus II software) from the Quartus II thereafter.
