I too am relatively new to Altera's latest and greatest offerings and much like yourself was wondering what would be a good fit for some of the same applications you have in mind. Our Altera FAE recommended the following:

Digi-Key P/N: 544-2411-ND

Description: KIT DEV NIOS II EMBEDDED - CYCLONE III EDITION
