i understand why some people reluctant to update their quartus, as when it is good enough no point to risk for another version that may come to potential incompatibility issues.

I only plan to update Quartus when I start working on a new project. Then when the project is started I freeze my Quartus version and only use that one without updating, unless there is a really blocking bug that requires another version of the software.

It is a very common practise in the industry, nothing special there.
If it ain't broken, don't fix it. 'cause you'll break it, and you still can't fix it. ;)
