I prefer the books:
Rapid prototyping of digital systems. James Humblen. ( to play with a kit ). Fundamentals of digital logic with VHDL design. Stephen Brown ( to learn the theory ). - Altera_Forum
There's lot of stuff available on the web. Personally, I prefer verilog over vhdl but that's a personal choice. Depending on your level of experience, google around and ye shall find an answer...
